• Question: How can you eat blue cheese as its moldy?

      Mould is a very useful signal, as for lots of foods it tell us that the food might not be safe to eat. Some types of mould produce toxins that make you really ill. However, the particular type of mould that is in blue cheese doesn’t produce these toxins, which means it’s safe to eat (and can even be good for you!).

      I will also add: because it is so, so tasty.
      Even if it made me unwell I’d probably still eat it because it is so nice.

      Also – not all moulds are bad as Alexandra says. For example the antibiotic Penicillin, a type of medicine that fights bacterial infections, comes from a mould ‘Penicillium’.

      And I have to disagree with Alex – blue cheese is not tasty, not tasty at all….!
