This is a slight myth. Carrots are high in vitamin A that contains beta-carotene (the name is not a coincidence) that is associated with good vision and healthy eye development.

Theres no good evidence to suggest how many carrots one would need to eat to gain significant health or eye-health benefits (though its certainly healthier to get vitamin A from food rather than from supplements).

However, night/dark or low-light vision is determined mostly by the number of rods (a special kind of cell) you have in your retina. To my knowledge this a genetic thing and isn’t altered by diet, vitamin A or carrots. So they’ll help you have healthy eyes – but your night vision won’t change much!
